When buying fresh raspberries look for berries that are plump, dark red with no stains on the bottom of the packaging. Fresh raspberries deteriorate rapidly so if you can't use them right away, freeze them. Freeze in a single layer on a cookie sheet, then pour them into a plastic freezer bag or container, label and they'll be ready to measure out the quantity needed for your next cooking adventure.
